ICELANDIC and SHETLAND
Icelandic sheep are primarily a meat breed, with good, broad, deep-bodied conformation. They will reach 90 to 110 pounds by Fall on grass alone. They can be slaughtered right off grass, as they are in Iceland.
Our Icelandic lambs weigh between 80 to 100 pounds. The Shetland lambs weigh between 40 to 70 lbs. These ancient breeds have fine round bones that make for a greater meat-to-bone ratio and they dress out at 45%.
The meat is fine grained and has a light flavor, no ''wooly'' or mutton smell or flavour, this is NOTHING like the New Zealand lamb at the groceries. In fact, many people who dislike lamb because of the '' wooly'' flavour cannot believe that this is indeed the same meat.
The taste of these ancient breed lambs has to be experienced to be believed.

Derived from the ancient Shetland native breed, Shetland lambs live a truly healthy and natural life in a traditional environment.
Our sheep have access to entirely natural grazing pastures. The meat is naturally lean as the lambs get plenty of room and exercise.
The factors above give the meat a supremely succulent and tender quality with what some say is a delicate, slightly ‘sweet’ flavour
We do not feed hormones, we do not give antibiotics (unless the animals life is in danger, but this has never happened and would be disclosed), we do not overcrowd, we are kind and humane to our animals and , we really don't enjoy the day they go off to slaughter, but we do believe that, since we are not vegetarians, we are better off raising our own healthy meat that has had a good, healthy, natural life.
